White Bean Kale Soup

This hearty White Bean Kale Soup combines nutritious kale and creamy white beans in a flavorful broth, making it a perfect comforting and healthy meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chopped kale, stems removed
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrot, and celery; sauté until vegetables are softened, about 5 minutes.
  2. Add minced garlic and thyme; cook for 1 minute until fragrant.
  3. Pour in vegetable broth and bring to a boil.
  4. Add white beans and chopped kale; reduce heat to a simmer and cook for 15 minutes until kale is tender.
  5. Season with salt, black pepper, and lemon juice if using. Stir well.
  6. Serve hot, garnished with extra kale or a drizzle of olive oil if desired.

Notes

For a richer flavor, sauté the vegetables in garlic-infused olive oil and add a sprinkle of red pepper flakes for subtle heat.
