A vibrant and healthy veggie sheet pan hash packed with roasted potatoes, bell peppers, and onions, perfect for a quick and nourishing breakfast or brunch.

  • 2 cups diced potatoes
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, chopped
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine diced potatoes, bell peppers, red onion, zucchini, and minced garlic.
  3. Drizzle olive oil over the vegetables and sprinkle smoked paprika, thyme, salt, and pepper. Toss until evenly coated.
  4. Spread the veggies evenly on a large sheet pan in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until potatoes are golden and tender.
  6. Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Notes

For extra protein, top with a fried or poached egg before serving, or add cooked sausage or tofu to the mix.
