Freshly Prepared Tuscan Chickpea Soup in Rustic Bowl

A hearty and flavorful Tuscan Chickpea Soup rich with garlic, herbs, and tender chickpeas, perfect for a comforting Italian-inspired meal.

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 (15 oz) can diced tomatoes
  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper, to taste
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese (optional)
  • Crusty bread, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5–7 minutes until softened.
  2. Add garlic and cook for another minute until fragrant.
  3. Stir in diced tomatoes, chickpeas, vegetable broth, rosemary, thyme, oregano, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld.
  5. Stir in chopped spinach and cook for an additional 3–5 minutes until wilted.
  6. Serve hot, topped with grated Parmesan and crusty bread on the side if desired.

Notes

For a creamier texture, blend half the soup before adding the spinach, or add a splash of cream for richness.
