Turkey Pot Pie with Biscuit Topping

  • 2 cups cooked turkey, shredded
  • 1 cup frozen peas and carrots
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups turkey or chicken broth
  • 1/2 cup milk
  • Salt and pepper, to taste
  • 1 cup biscuit mix (for topping)
  • 2/3 cup milk (for biscuit dough)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Add onion and celery and cook until softened, about 5 minutes.
  3. Stir in flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in broth and milk, cooking until mixture thickens and bubbles.
  5. Add cooked turkey and frozen peas and carrots, stirring to combine. Season with salt and pepper.
  6. Pour the turkey filling into a baking dish.
  7. In a bowl, mix biscuit mix with 2/3 cup milk until just combined.
  8. Drop biscuit dough by spoonfuls evenly over the turkey filling.
  9. Bake for 20-25 minutes until the biscuit topping is golden brown and cooked through.
  10. Let cool slightly before serving.

Notes

For extra flavor, add fresh herbs like thyme or rosemary to the gravy. Serve with a side salad for a complete meal.
