Turkey Cranberry Quesadillas

These Turkey Cranberry Quesadillas combine savory turkey with sweet cranberry sauce and melty cheese, making a deliciously easy snack or light meal perfect for any time of year.

  • 4 large flour tortillas
  • 1 cup cooked turkey, shredded or chopped
  • 1/2 cup cranberry sauce
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon butter
  • Optional: sliced green onions for garnish

Instructions

  1. Heat a large skillet over medium heat.
  2. Spread cream cheese evenly on one side of each tortilla.
  3. On two tortillas, layer shredded turkey, cranberry sauce, and cheddar cheese over the cream cheese side.
  4. Top with the remaining two tortillas, cream cheese side down, to form quesadillas.
  5. Add butter to the heated skillet and place one quesadilla in the pan.
  6. Cook for 3-4 minutes on each side or until golden brown and cheese has melted.
  7. Repeat with the second quesadilla.
  8. Remove from heat, slice into wedges, and garnish with sliced green onions if desired. Serve warm.

Notes

For an extra kick, try adding a little chopped jalapeño or a drizzle of hot sauce before folding the quesadillas.
