Homemade Tortellini Soup Close-up

This comforting Tortellini Soup combines cheesy tortellini with a savory broth and fresh vegetables for a delicious Italian-inspired meal perfect any day of the week.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups fresh spinach
  • 1 (9 oz) package refrigerated cheese tortellini
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  2. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Pour in chicken broth and diced tomatoes with their juice. Stir in dried basil and crushed red pepper flakes if using.
  4. Bring the soup to a boil, then reduce heat and simmer for 5 minutes.
  5. Add the tortellini and cook according to package instructions, usually about 3-5 minutes, until tender.
  6. Stir in fresh spinach and cook until wilted, about 1-2 minutes.
  7. Season with salt and pepper to taste.
  8. Ladle soup into bowls, garnish with grated Parmesan cheese, and serve warm.

Notes

For an extra protein boost, add cooked shredded chicken or Italian sausage. Serve with crusty bread for a hearty meal.
