  • 1 cup cooked quinoa
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup shredded carrots
  • 1/2 cup baby spinach
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Optional: chopped cilantro for garnish

Instructions

  1. Cook the quinoa according to package instructions and let it cool slightly.
  2. In a large bowl, combine the cooked quinoa, black beans, corn, cherry tomatoes, red onion, shredded carrots, and baby spinach.
  3. In a small bowl, whisk together olive oil, lime juice, ground cumin, salt, and pepper.
  4. Pour the dressing over the quinoa mixture and toss gently to combine all ingredients evenly.
  5. Top the bowl with sliced avocado and garnish with chopped cilantro, if using.
  6. Serve immediately or chill for 30 minutes to allow flavors to meld.
