Strawberry Banana Muffins

Delight in these moist and naturally sweet strawberry banana muffins, perfect for a wholesome breakfast or snack.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 2 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. In a separate bowl, beat the egg, then stir in melted butter, mashed bananas, milk, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix.
  5. Fold in the chopped strawberries carefully to distribute evenly.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra touch, sprinkle the muffin tops with a little cinnamon sugar before baking or serve warm with a drizzle of honey or nut butter.
