Spicy Shrimp Sushi Stacks combine tender shrimp with zesty mayo, avocado, and sushi rice in a visually stunning layered dish perfect for impressive appetizers or light dinners.

  • 1 cup sushi rice, cooked and cooled
  • 8 oz cooked shrimp, chopped
  • 2 tbsp mayonnaise
  • 1 tbsp Sriracha sauce
  • 1 ripe avocado, diced
  • 1/4 cup cucumber, finely diced
  • 1 tsp rice vinegar
  • 1 tsp soy sauce
  • 1 tsp toasted sesame oil
  • 1 green onion, thinly sliced
  • 1 sheet nori, cut into small strips (optional)
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix cooked sushi rice with rice vinegar and set aside to cool.
  2. In a separate bowl, combine mayonnaise and Sriracha to make spicy mayo.
  3. Gently fold chopped shrimp into the spicy mayo until well coated.
  4. Mix diced avocado and cucumber with soy sauce and sesame oil in another bowl.
  5. To assemble, use a ring mold or small bowl: press a layer of sushi rice first at the bottom.
  6. Add a layer of avocado-cucumber mixture over the rice.
  7. Top with a generous layer of spicy shrimp mixture.
  8. Carefully remove the mold to reveal a stacked sushi tower.
  9. Garnish with green onion slices, sesame seeds, and nori strips if using.
  10. Serve immediately and enjoy your flavorful sushi stacks!

Notes

For an extra kick, drizzle additional Sriracha on top before serving or serve with pickled ginger and soy sauce on the side.
