Spicy miso ramen is a comforting Japanese noodle soup featuring rich miso broth with a kick of heat, tender noodles, and flavorful toppings for a satisfying meal.

  • 4 cups chicken or vegetable broth
  • 2 tablespoons red miso paste
  • 1 tablespoon chili garlic sauce
  • 2 teaspoons sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 200g ramen noodles
  • 1 cup sliced shiitake mushrooms
  • 2 green onions, sliced
  • 1 soft-boiled egg (optional)
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon toasted sesame seeds
  • Fresh cilantro for garnish

Instructions

  1. Heat sesame oil in a pot over medium heat. Add garlic and ginger; sauté until fragrant, about 1 minute.
  2. Pour in the broth and bring to a simmer.
  3. Whisk in miso paste, chili garlic sauce, soy sauce, and rice vinegar until well combined.
  4. Add shiitake mushrooms and cook for 5 minutes until tender.
  5. Cook ramen noodles separately according to package instructions, then drain.
  6. Divide noodles into bowls and ladle hot broth with mushrooms over them.
  7. Top each bowl with sliced green onions, a soft-boiled egg if using, sesame seeds, and fresh cilantro.
  8. Serve immediately and enjoy your spicy miso ramen.

Notes

For extra protein, add sliced grilled chicken or tofu. Adjust chili garlic sauce to control the spice level.
