Slow Cooker Italian Beef Sandwiches

Tender Italian beef slow-cooked to perfection and served on crusty rolls, making these sandwiches a flavorful and comforting meal ideal for easy weeknight dinners or game day gatherings.

  • 3 pounds beef roast (top sirloin or chuck)
  • 1 packet Italian dressing mix
  • 1 packet dry Italian salad dressing mix
  • 1 cup beef broth
  • 1/2 cup pepperoncini juice
  • 6 pepperoncini peppers, sliced
  • 4 hoagie rolls or Italian sandwich buns
  • Provolone cheese slices (optional)
  • Salt and pepper, to taste

Instructions

  1. Place the beef roast in the slow cooker.
  2. Sprinkle Italian dressing and salad dressing mixes evenly over the beef.
  3. Pour beef broth and pepperoncini juice over the roast.
  4. Add sliced pepperoncini peppers on top.
  5. Cover and cook on low for 8 hours or until beef is tender and easily shredded.
  6. Remove beef and shred with two forks, then return to the slow cooker and stir to combine with juices.
  7. Split the rolls and pile the shredded beef onto each bun, topping with provolone if desired.
  8. Serve warm and enjoy.

Notes

For added flavor, toast the sandwich rolls and dip the sandwiches in the beef juices (au jus) before eating.
