A vibrant and wholesome Shrimp Scampi Nourish Bowl featuring tender shrimp sautéed in garlic butter served over a bed of nutritious grains and fresh vegetables, perfect for a quick and flavorful dinner.

  • 12 oz large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/4 cup dry white wine or chicken broth
  • 2 tbsp fresh lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 cups cooked quinoa or brown rice
  • 1 cup steamed broccoli florets
  • 1 cup grape tomatoes, halved
  • 1/2 avocado, sliced
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil and 2 tbsp butter in a large skillet over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add shrimp to the skillet, season with salt, pepper, and red pepper flakes, cook for 2 minutes on each side until pink and opaque.
  4. Pour in white wine (or chicken broth) and lemon juice, simmer for 2 minutes until the sauce reduces slightly.
  5. Remove from heat and stir in remaining 1 tbsp butter until melted and combined.
  6. In serving bowls, layer the cooked quinoa or brown rice, steamed broccoli, and grape tomatoes.
  7. Top with shrimp and drizzle the garlic butter sauce over the bowl.
  8. Garnish with avocado slices and fresh parsley before serving.

Notes

For extra flavor, sprinkle with grated Parmesan cheese or serve with crusty bread to soak up the garlic butter sauce.
