Salmon Croquettes

Crispy on the outside and tender on the inside, these salmon croquettes make a delicious, protein-packed snack or meal perfect for any time of day.

  • 1 can (14.75 oz) salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 tablespoons mayonnaise
  • 1 large egg, beaten
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • Vegetable oil for frying

Instructions

  1. In a medium bowl, combine the flaked salmon, breadcrumbs, chopped onion, mayonnaise, beaten egg, lemon juice, Dijon mustard, garlic powder, salt, pepper, and parsley.
  2. Mix well until all ingredients are evenly incorporated and the mixture holds together when formed.
  3. Shape the mixture into 8 equal-sized patties, about 2-3 inches in diameter.
  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  5. Once the oil is hot, carefully add the croquettes to the skillet. Fry for 3-4 minutes on each side or until golden brown and heated through.
  6. Remove the croquettes from the skillet and drain on paper towels to remove excess oil.
  7. Serve warm with lemon wedges or your favorite dipping sauce.

Notes

For a lighter option, bake the croquettes at 400°F (200°C) for 15-20 minutes, flipping halfway through until crispy and golden.
