These Roasted Red Pepper Hummus Wraps are a delicious, healthy, and easy-to-make meal perfect for lunch or a light dinner, featuring creamy roasted red pepper hummus paired with fresh veggies.

Ingredients

  • 4 large whole wheat tortillas
  • 1 cup roasted red pepper hummus
  • 1 cup mixed salad greens
  • 1 medium cucumber, thinly sliced
  • 1 medium carrot, shredded
  • 1 small avocado, sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Lay each tortilla flat on a clean surface.
  2. Spread about 1/4 cup of roasted red pepper hummus evenly over each tortilla.
  3. Layer the mixed salad greens, cucumber slices, shredded carrot, and avocado slices on top of the hummus.
  4. Sprinkle crumbled feta cheese and chopped parsley evenly over the fillings.
  5. Season with salt and pepper to taste.
  6. Carefully roll up each tortilla tightly to enclose the fillings.
  7. Slice each wrap diagonally in half and serve immediately, or wrap in foil and refrigerate for later.
