Roasted Beet Goat Cheese

A vibrant and creamy Roasted Beet Goat Cheese dish that combines the earthy sweetness of roasted beets with tangy goat cheese, perfect as a flavorful appetizer or salad topping.

  • 3 medium beets, washed and trimmed
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 4 ounces goat cheese, softened
  • 1 tablespoon fresh thyme leaves (optional)
  • 1 tablespoon balsamic vinegar
  • Mixed greens or arugula, for serving

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wrap each beet individually in foil and place on a baking sheet.
  3. Roast beets in the oven for about 45-60 minutes, until tender when pierced with a fork.
  4. Remove beets from the oven, unwrap, and let cool slightly. Peel the skins off and cut into wedges.
  5. Toss the beet wedges with olive oil, balsamic vinegar, salt, and pepper.
  6. Arrange mixed greens on a serving plate and top with roasted beets.
  7. Dollop goat cheese over the beets and sprinkle with fresh thyme leaves if desired.
  8. Serve immediately as an appetizer or side salad.

Notes

For added crunch, sprinkle toasted walnuts or pecans over the dish before serving.
