  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup ranch dressing
  • 1/4 cup sliced black olives
  • 1/4 cup chopped green onions
  • Tortilla chips for serving (optional)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and 1/4 cup water to the beef, stirring to combine. Simmer for 5 minutes until sauce thickens.
  3. In serving bowls, layer cooked rice as the base.
  4. Top rice with seasoned beef, lettuce, tomatoes, black beans, corn, and shredded cheddar cheese.
  5. Drizzle ranch dressing evenly over each bowl.
  6. Garnish with sliced black olives and chopped green onions.
  7. Serve with tortilla chips on the side for extra crunch if desired.
