These Pumpkin Quesadillas blend creamy pumpkin puree with melted cheese and warm spices inside crispy tortillas, creating a comforting and flavorful twist on a classic Mexican snack.

  • 2 cups pumpkin puree
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 tablespoon olive oil or butter for cooking

Instructions

  1. In a bowl, mix pumpkin puree, ground cinnamon, cumin, chili powder, salt, and pepper until well combined.
  2. Heat a skillet over medium heat and add a teaspoon of olive oil or butter.
  3. Place one tortilla in the skillet and spread about 1/4 of the pumpkin mixture evenly over half of the tortilla.
  4. Sprinkle a quarter of the shredded Monterey Jack and cheddar cheeses on top of the pumpkin mixture.
  5. Fold the tortilla in half to cover the filling and press gently with a spatula.
  6. Cook for 3-4 minutes until the bottom is golden brown, then carefully flip and cook the other side until golden and the cheese is melted.
  7. Repeat with remaining tortillas and filling.
  8. Cut quesadillas into wedges and serve warm.

Notes

For extra flavor, serve with a dollop of sour cream or a drizzle of chipotle sauce. You can also add sautéed onions or black beans for added texture.
