Scale
  • 1 sheet puff pastry, thawed
  • 8 oz fresh mozzarella, sliced
  • 2 medium ripe tomatoes, sliced
  • Fresh basil leaves
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste

  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).

  3. Cut the pastry into 6 equal squares and place on a parchment-lined baking sheet.
  4. Brush each square with beaten egg to ensure a golden crust.
  5. Bake the puff pastry squares for 12-15 minutes or until golden and puffed.
  6. Remove from oven and let cool slightly.
  7. Layer slices of mozzarella and tomato evenly over each puff pastry square.
  8. Add fresh basil leaves on top and drizzle with olive oil.

  10. Finish by drizzling balsamic glaze over each pastry before serving.

Notes

For an extra burst of flavor, add a sprinkle of crushed red pepper flakes or a drizzle of pesto before serving.
