Ingredients

Scale
  • 8 lamb chops
  • 1 cup pomegranate juice
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 1 tablespoon balsamic vinegar
  • Fresh pomegranate seeds, for garnish

Instructions

  1. Season lamb chops with salt, pepper, and rosemary on both sides.
  2. Heat olive oil in a skillet over medium-high heat and sear the lamb chops for 3-4 minutes per side until browned. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add pomegranate juice, honey, and balsamic vinegar, stirring to combine.
  5. Simmer the sauce for 8-10 minutes until it thickens to a glaze consistency.
  6. Return the lamb chops to the skillet, spoon the glaze over them, and cook for an additional 2-3 minutes to heat through and caramelize the glaze.
  7. Serve lamb chops garnished with fresh pomegranate seeds.

Notes

For an extra layer of flavor, marinate the lamb chops in garlic and rosemary for 1 hour before cooking. Serve with a side of roasted vegetables or creamy mashed potatoes.
