Pineapple Chicken is a vibrant, flavorful dish combining tender chicken with sweet pineapple and a tangy sauce, perfect for a quick and delicious weeknight dinner.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable oil
  • 1/4 cup sliced green onions (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. In a bowl, combine pineapple juice, soy sauce, brown sugar, rice vinegar, garlic, and ginger; mix well.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Add pineapple chunks to the skillet and cook for another 2 minutes.
  4. Pour the sauce mixture over the chicken and pineapple. Bring to a simmer.
  5. Stir in the cornstarch slurry and cook until the sauce thickens, about 1-2 minutes.
  6. Remove from heat and garnish with sliced green onions and sesame seeds if desired.
  7. Serve hot with steamed rice or noodles.

Notes

For extra flavor, add red bell peppers or a dash of crushed red pepper flakes to the sauce for a spicy kick.
