Pesto chicken is a flavorful and easy-to-make Italian-inspired dish featuring tender chicken breasts coated in vibrant basil pesto, perfect for a quick weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup basil pesto
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.
  4. Remove the skillet from heat and spread a generous layer of basil pesto evenly over each chicken breast.
  5. Top with cherry tomatoes and sprinkle with Parmesan cheese if desired.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and juices run clear.
  7. Remove from oven, let rest for a few minutes, then serve warm.
