  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar until smooth.
  3. Add the egg and vanilla extract; mix well.
  4. Stir in baking soda and salt until fully incorporated.
  5. Roll dough into 1-inch balls and place on the prepared baking sheet, spacing them about 2 inches apart.
  6. Optional: Press each ball lightly with a fork to create a crisscross pattern.
  7. Bake for 8-10 minutes until edges are golden but centers are still soft.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
