These Peanut Butter Banana Oat Bars are a naturally sweet, wholesome snack perfect for breakfast or an energy boost on the go.

  • 2 ripe bananas, mashed
  • 1 cup natural peanut butter
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
  3. Stir in the oats, cinnamon, and salt until fully combined.
  4. Fold in mini chocolate chips if using.
  5. Press the mixture evenly into the prepared baking pan.
  6. Bake for 20-25 minutes or until the edges turn golden brown.
  7. Remove from oven and let cool completely before cutting into bars.

Notes

For extra crunch, sprinkle chopped nuts on top before baking or refrigerate bars to firm up for easier slicing.
