Oven-Crisped Parmesan Potatoes

Oven-Crisped Parmesan Potatoes are golden, crunchy on the outside, and tender inside, flavored with savory Parmesan and herbs for a perfect side dish.

  • 2 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic powder, dried rosemary, salt, and pepper.
  3. Spread the potatoes cut-side down on the baking sheet in a single layer.
  4. Bake for 20 minutes, then remove from oven and sprinkle Parmesan cheese evenly over the potatoes.
  5. Return to the oven and bake an additional 10-15 minutes until potatoes are crispy and golden brown.
  6. Remove from oven and garnish with chopped fresh parsley before serving, if desired.

Notes

For extra crispiness, soak the potato halves in cold water for 30 minutes before cooking and pat dry thoroughly. Serve with a dollop of sour cream or your favorite dipping sauce.
