This vibrant Lemon-Herb Chicken Nourish Bowl features tender grilled chicken marinated in fresh lemon and herbs, served atop a bed of wholesome grains and crisp vegetables for a nutritious and flavorful meal.

  • 2 boneless, skinless chicken breasts
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup baby spinach leaves
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber, diced
  • 1/4 avocado, sliced
  • 1 tablespoon chopped fresh parsley
  • Optional: Feta cheese for topping

Instructions

  1. In a bowl, combine lemon zest, lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper to create the marinade.
  2. Place chicken breasts in the marinade and refrigerate for at least 30 minutes.
  3. Preheat grill or grill pan over medium heat. Grill chicken for 6-7 minutes per side until cooked through.
  4. Let chicken rest for 5 minutes, then slice into strips.
  5. Assemble the nourish bowl by layering quinoa, spinach, cherry tomatoes, shredded carrots, cucumber, and avocado slices in a bowl.
  6. Top with sliced grilled chicken and sprinkle with fresh parsley and optional feta cheese.
  7. Serve immediately and enjoy.

Notes

For extra zest, drizzle some additional fresh lemon juice over the bowl before serving, or substitute quinoa with brown rice for a different grain option.
