Jalapeno Poppers Nourish Bowl

A vibrant and flavorful nourish bowl featuring spicy jalapeno poppers atop a bed of wholesome grains and fresh vegetables, perfect for a satisfying and healthy meal.

  • 4 jalapenos, halved and seeded
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup black beans, rinsed and drained
  • 1/2 avocado, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp chopped cilantro (optional)
  • 1 lime wedge

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix cream cheese and shredded cheddar cheese in a bowl until combined.
  3. Spoon the cheese mixture into each jalapeno half.
  4. Place stuffed jalapenos on a baking sheet and drizzle with olive oil.
  5. Bake for 15-20 minutes until jalapenos are tender and cheese is bubbly and golden.
  6. In a bowl, layer cooked quinoa, baby spinach, cherry tomatoes, black beans, and avocado slices.
  7. Top the bowl with the baked jalapeno poppers.
  8. Garnish with chopped cilantro and a squeeze of lime juice.
  9. Season with salt and pepper to taste and serve immediately.

Notes

For extra crunch, add toasted pumpkin seeds or swap black beans for grilled chicken to increase protein.
