These Honey Sriracha Chicken Rice Bowls combine sweet and spicy flavors with tender chicken, served over fluffy rice for a quick and satisfying meal.

  • 2 cups cooked white or brown rice
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons honey
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 cup shredded carrots
  • 1 cup chopped cucumber
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, and minced garlic to make the sauce.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  4. Pour the sauce over the chicken in the skillet and stir to coat. Cook for another 2-3 minutes until the sauce thickens slightly.
  5. Divide cooked rice evenly into bowls.
  6. Top rice with the honey sriracha chicken, shredded carrots, chopped cucumber, and sliced green onions.
  7. Sprinkle with sesame seeds if desired and serve immediately.

Notes

For added crunch and flavor, serve with a side of steamed broccoli or add avocado slices on top.
