This comforting Ginger Scallion Chicken Noodle Soup blends fragrant ginger and fresh scallions with tender chicken and noodles for a warm, nourishing meal.

Ingredients

  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, grated
  • 4 scallions, sliced (white and green parts separated)
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 4 ounces egg noodles
  • 2 tablespoons soy sauce
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • Juice of 1 lime (optional)

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add grated ginger and white parts of scallions; sauté for 2 minutes until fragrant.
  2. Add minced garlic and cook for another 30 seconds.
  3. Pour in chicken broth and bring to a simmer.
  4. Add chicken breasts to the simmering broth. Cook for 15-20 minutes until chicken is cooked through.
  5. Remove chicken breasts and shred them using two forks.
  6. Return shredded chicken to the pot. Add egg noodles and cook according to package instructions, about 5-7 minutes, until tender.
  7. Stir in soy sauce, and season with salt and pepper to taste.
  8. Remove from heat and stir in the green parts of scallions.
  9. Ladle soup into bowls, garnish with fresh cilantro and a squeeze of lime juice if desired. Serve hot.

Notes

For extra depth of flavor, try roasting the ginger and scallions before sautéing or adding a splash of toasted sesame oil before serving.
