  • 1 lb chicken thighs, boneless and skinless, cut into chunks
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery, sautéing until softened, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Push vegetables to the side and add the chicken chunks. Cook until lightly browned on all sides, about 5-7 minutes.
  4. Sprinkle the flour over the chicken and vegetables, stirring well to coat, and cook for 2 minutes to remove the raw flour taste.
  5. Slowly pour in the chicken broth while stirring constantly to avoid lumps.
  6. Add the dried thyme and oregano, then bring the stew to a gentle boil. Reduce heat and simmer for 15 minutes until the chicken is cooked through and the vegetables are tender.
  7. Stir in the heavy cream and Parmesan cheese, stirring until the cheese melts and the stew thickens slightly.
  8. Season with salt and pepper to taste.
  9. Remove from heat and stir in butter for extra richness.
  10. Serve hot, garnished with chopped fresh parsley if desired.
