  • 1 lb beef sirloin, cut into bite-sized pieces
  • 3 tbsp unsalted butter, divided
  • 4 garlic cloves, minced
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • 2 tbsp chopped fresh parsley (optional)

Instructions

  1. Place potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender, about 15-20 minutes.
  2. While potatoes cook, heat olive oil in a large skillet over medium-high heat. Season beef bites with salt and pepper.
  3. Add half the butter to the skillet along with the minced garlic. Sauté garlic for 1 minute until fragrant.
  4. Add beef bites to the skillet and cook, turning occasionally, until browned and cooked through, about 5-7 minutes. Remove from heat and keep warm.
  5. Drain the cooked potatoes and return them to the pot. Add the remaining butter, milk, and sour cream. Mash until smooth and creamy. Season with salt and pepper to taste.
  6. Serve beef bites over a bed of creamy mashed potatoes and garnish with chopped parsley if desired.

Notes

For an extra flavor boost, sprinkle the beef bites with a pinch of smoked paprika before cooking or add roasted garlic to the mashed potatoes.
