  • 4 boneless, skinless chicken breasts
  • 3 large yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme leaves
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper and brown on both sides until golden, about 3 minutes per side. Remove and set aside.
  3. In the same skillet, melt butter and add sliced onions. Cook, stirring occasionally, until caramelized and golden brown, about 20-25 minutes.
  4. Add minced garlic, fresh thyme, Worcestershire sauce, and beef broth to the onions. Simmer for 5 minutes until slightly reduced.
  5. Place the browned chicken breasts in a baking dish. Pour the onion mixture evenly over the chicken.
  6. Sprinkle shredded Gruyère and mozzarella cheese evenly on top.
  7. Bake uncovered for 25-30 minutes until the chicken is cooked through (internal temperature 165°F/74°C) and cheese is bubbly and golden.
  8. Garnish with fresh parsley before serving.

Serve this bake alongside a crisp green salad or crusty bread for a complete meal. For extra depth, add a splash of dry white wine to the onion mixture while sautéing.
