Peanut Noodles

Peanut Noodles are a flavorful and creamy dish combining tender noodles with a rich, nutty peanut sauce, perfect for a quick and satisfying meal.

  • 8 oz noodles (rice noodles or spaghetti)
  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • 1 tsp grated fresh ginger
  • 1/4 cup warm water
  • 1/4 cup chopped green onions
  • 1 tbsp chopped peanuts (for garnish)
  • Optional: red pepper flakes or sriracha for heat

Instructions

  1. Cook noodles according to package instructions until al dente. Drain and rinse under cold water to stop cooking.
  2. In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, and warm water until smooth.
  3. Toss the cooked noodles with the peanut sauce until evenly coated.
  4. Garnish with chopped green onions and peanuts. Add red pepper flakes or sriracha if desired for spice.
  5. Serve immediately or chilled for a refreshing twist.

Notes

For added protein, top with grilled chicken, tofu, or shrimp. Adding fresh vegetables like julienned carrots or cucumber can add a nice crunch.
