cheese quesadilla

A cheese quesadilla is a simple and delicious Mexican-inspired dish featuring melted cheese inside a crispy, toasted tortilla, perfect for a quick snack or light meal.

  • 2 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon butter or oil
  • Optional: salsa, sour cream, guacamole for serving

Instructions

  1. Heat a large skillet over medium heat and add half the butter or oil.
  2. Place one tortilla in the skillet and evenly sprinkle both cheeses over it.
  3. Top with the second tortilla and press down gently.
  4. Cook for 2-3 minutes until the bottom tortilla is golden brown and the cheese starts to melt.
  5. Carefully flip the quesadilla with a spatula and cook the other side for another 2-3 minutes until golden and cheese is fully melted.
  6. Remove from skillet and let cool for a minute, then cut into wedges.
  7. Serve warm with optional salsa, sour cream, or guacamole.

Notes

For a flavor boost, add cooked chicken, sautéed peppers, or a sprinkle of chili powder before melting the cheese.
