Crustless Bacon Cheese Quiche

This Crustless Bacon Cheese Quiche is a savory and rich dish perfect for breakfast, brunch, or a light dinner. It features crispy bacon and melted cheese baked into a creamy, egg-based custard without the need for a crust.

Ingredients

Scale
  • 6 large eggs
  • 1 cup half-and-half or heavy cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup chopped onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or quiche pan.
  2. Cook bacon slices in a skillet over medium heat until crispy. Remove, drain on paper towels, then crumble once cooled.
  3. In a medium bowl, whisk together eggs, half-and-half, salt, pepper, and garlic powder until fully combined.
  4. Scatter cooked bacon, shredded cheddar cheese, and chopped onions evenly over the bottom of the prepared pie dish.
  5. Pour the egg mixture over the bacon, cheese, and onions.
  6. Bake for 35-40 minutes, or until the quiche is set and a knife inserted near the center comes out clean.
  7. Remove from oven and allow to cool for 5-10 minutes before slicing.
  8. Garnish with fresh parsley if desired and serve warm.

Notes

For extra flavor, try adding sautéed mushrooms or spinach to the quiche mixture before baking. Serve with a side salad for a complete meal.
