This Croissant Bake is a deliciously flaky and savory breakfast casserole combining buttery croissants with eggs, cheese, and your choice of fillings, perfect for a family brunch or hearty start to your day.

  • 4 large croissants, halved horizontally
  • 8 large eggs
  • 1 cup whole milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage or bacon
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Optional: 1/2 cup diced bell peppers or mushrooms

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Slice the croissants in half horizontally and arrange the bottom halves evenly in the prepared dish.
  3. Sprinkle cooked sausage or bacon, green onions, and optional veggies over the croissant bottoms.
  4. Top with half of the shredded cheddar cheese.
  5. Whisk together eggs, milk, salt, pepper, and garlic powder until well combined.
  6. Pour the egg mixture evenly over the croissants and toppings.
  7. Place the croissant tops over the egg mixture, pressing down gently to soak.
  8. Sprinkle the remaining cheese over the top layer.
  9. Bake for 35–40 minutes until the egg is set and the top is golden brown.
  10. Let cool for 5 minutes before serving.

Notes

For a sweeter twist, try adding sliced apples and a sprinkle of cinnamon instead of savory fillings.
