Crispy Corn Toast Bites are a delightful, crunchy snack combining sweet corn kernels with toasted bread for a perfect bite-sized treat. Ideal for parties or a quick savory snack.

  • 4 slices of white bread, crusts removed
  • 1 cup fresh or frozen corn kernels
  • 2 tablespoons mayonnaise
  • 1 tablespoon grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons butter, melted
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine corn kernels, mayonnaise, Parmesan cheese, smoked paprika, salt, and pepper.
  3. Cut each bread slice into bite-sized cubes and toss them lightly with the melted butter.
  4. Arrange the bread cubes on a baking sheet in a single layer and toast in the oven for 5 minutes or until lightly golden.
  5. Remove the bread cubes and gently fold them into the corn mixture, coating each piece evenly.
  6. Spread the corn-coated bread cubes back on the baking sheet and bake for an additional 10-12 minutes, until crispy and golden brown.
  7. Remove from the oven and garnish with fresh chopped parsley before serving.

Notes

For extra flavor, try adding a pinch of chili flakes or a squeeze of lime juice before serving to enhance the taste.
