  • 2 cups cooked butter beans (or 1 can, drained and rinsed)
  • 2 tablespoons unsalted butter
  • 1 tablespoon white miso paste
  • 1/4 cup vegetable broth
  • 1 small shallot, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté the shallot and garlic until fragrant and translucent, about 2-3 minutes.
  2. Add the cooked butter beans to the skillet and stir to combine.
  3. In a small bowl, whisk together the miso paste and vegetable broth until smooth.
  4. Pour the miso mixture over the beans and stir, allowing it to heat through for 2-3 minutes.
  5. Add the butter and stir until melted and the beans become creamy.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped fresh parsley before serving.

Notes

For extra richness, stir in a splash of cream or a sprinkle of toasted sesame seeds before serving.
