Cold Sesame Noodles

Cold Sesame Noodles are a refreshing and flavorful dish featuring tender noodles tossed in a creamy, nutty sesame sauce, perfect for a quick lunch or light dinner.

Ingredients

  • 8 oz spaghetti or Chinese egg noodles
  • 3 tbsp tahini or smooth peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp grated fresh ginger
  • 2 garlic cloves, minced
  • 1/4 cup warm water
  • 1/4 cup chopped scallions (green onions)
  • 1 tbsp toasted sesame seeds
  • Optional: 1 tsp chili paste or sriracha for heat

Instructions

  1. Cook the noodles according to package instructions until al dente. Drain and rinse under cold water to cool and stop cooking. Set aside.
  2. In a bowl, whisk together tahini (or peanut butter), soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
  3. Gradually add warm water to the sauce mixture, whisking until smooth and creamy. Adjust consistency as needed.
  4. Optional: Stir in chili paste or sriracha if you want a spicy kick.
  5. Toss the cooled noodles with the prepared sesame sauce until evenly coated.
  6. Garnish with chopped scallions and toasted sesame seeds before serving.

Notes

For added texture and nutrition, serve with julienned cucumber or shredded carrots. This dish can be served chilled or at room temperature.
