Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs
  • 1/4 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 1 teaspoon orange zest
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a bowl, whisk together orange juice, lemon juice, olive oil, minced garlic, honey, thyme, orange zest, salt, pepper, and red pepper flakes if using.
  2. Place chicken thighs in a large resealable bag or shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 1 hour, preferably 4 hours.
  3. Preheat oven to 400°F (200°C).
  4. Remove chicken from marinade and place on a baking sheet lined with foil or parchment paper, skin side up.
  5. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy.
  6. Optionally, broil for 2-3 minutes at the end to crisp the skin further.
  7. Let rest for 5 minutes before serving. Spoon some pan juices over the chicken for extra flavor.

Notes

For an extra fresh touch, garnish with chopped fresh cilantro or parsley and serve alongside a light green salad or roasted vegetables.
