cinnamon swirl banana bread

Moist and flavorful cinnamon swirl banana bread that’s perfect for a comforting breakfast or snack, featuring ripe bananas and a warm cinnamon sugar swirl.

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • ½ cup sour cream or Greek yogurt
  • 1 tablespoon ground cinnamon
  • ¼ cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Mix in mashed bananas, vanilla extract, and sour cream until combined.
  6. Gradually add the dry ingredients to the wet mixture, folding gently until just incorporated.
  7. In a small bowl, mix cinnamon and granulated sugar.
  8. Pour half of the banana bread batter into the loaf pan, sprinkle half of the cinnamon sugar mixture over it.
  9. Add the remaining batter on top, then sprinkle the rest of the cinnamon sugar to create the swirl.
  10. Use a knife to gently swirl the cinnamon sugar into the batter for a marbled effect.
  11. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  12. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For an extra moist bread, substitute sour cream with Greek yogurt and add chopped walnuts or chocolate chips for variety.
