A comforting and hearty chicken shepherd’s pie featuring tender shredded chicken, mixed vegetables, and creamy mashed potatoes baked to golden perfection.

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1/2 cup corn kernels
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 2 cups mashed potatoes
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce (optional)
  • 2 tablespoons butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic, diced carrots, and cook for another 3-4 minutes until carrots start to soften.
  4. Stir in the flour and cook for 1 minute to remove raw flour taste.
  5. Gradually add chicken broth and milk, stirring constantly until the mixture thickens.
  6. Add shredded chicken, frozen peas, corn, dried thyme, Worcestershire sauce (if using), salt, and pepper. Cook for 2-3 minutes until heated through.
  7. Transfer the chicken and vegetable mixture into a baking dish and spread evenly.
  8. Top the mixture with mashed potatoes, smoothing the surface with a spatula. Dot the top with butter.
  9. Bake in the preheated oven for 25-30 minutes until the top is golden and the filling is bubbly.
  10. Allow to cool for 5 minutes before serving.

Notes

For extra flavor, sprinkle some shredded cheddar cheese on top of the mashed potatoes before baking.
