Chicken Noodle Soup

A classic, comforting chicken noodle soup made with tender chicken, fresh vegetables, and hearty noodles, perfect for any day of the year.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until vegetables are tender, about 5-7 minutes.
  2. Add garlic and cook for another 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Add shredded chicken, dried thyme, and dried parsley. Reduce heat and simmer for 10 minutes.
  5. Add egg noodles and cook according to package instructions, usually about 7-8 minutes, until noodles are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For deeper flavor, use homemade chicken broth and consider adding a squeeze of lemon juice just before serving to brighten the soup.
