This creamy, cheesy corn dip is a perfect appetizer for any gathering, combining sweet corn with melted cheese and a hint of spice for a flavorful crowd-pleaser.

  • 2 cups frozen corn kernels, thawed
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup diced green chilies
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cream cheese, sour cream, and mayonnaise until smooth.
  3. Stir in corn kernels, shredded cheddar, diced green chilies, green onions, garlic powder, and smoked paprika.
  4. Season with salt and pepper to taste.
  5. Transfer the mixture to a baking dish and spread evenly.
  6. Bake for 20-25 minutes, or until the top is golden and bubbling.
  7. Remove from oven and allow to cool slightly before serving.

Notes

For extra heat, add a diced jalapeño or a dash of hot sauce before baking. Serve warm with tortilla chips or fresh veggie sticks.
