Buffalo Chicken Taquitos

Crispy baked taquitos filled with spicy buffalo chicken and creamy cheese, perfect for a flavorful appetizer or snack.

  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo wing sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup chopped green onions
  • 12 small flour or corn tortillas
  • Cooking spray or oil for brushing
  • Ranch or blue cheese dressing, for serving (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine shredded chicken, buffalo wing sauce, cheddar cheese, cream cheese, and green onions until well mixed.
  3. Warm tortillas slightly to make them pliable.
  4. Spoon about 2 tablespoons of the chicken mixture onto each tortilla and roll tightly.
  5. Place each rolled taquito seam-side down on the baking sheet. Lightly brush or spray with oil.
  6. Bake for 15-20 minutes until the tortillas are crispy and golden brown.
  7. Serve hot with ranch or blue cheese dressing if desired.

Notes

For extra crispiness, you can lightly fry the taquitos instead of baking, but baking is a healthier option.
