Beef Stroganoff With Sour Cream

This classic Beef Stroganoff features tender strips of beef in a creamy sour cream sauce, perfect for a comforting and hearty meal.

  • 1 lb beef sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Fresh parsley, chopped (for garnish)
  • Egg noodles or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the beef slices and cook until browned on all sides. Remove beef and set aside.
  2. In the same skillet, melt butter and sauté onion and garlic until softened.
  3. Add mushrooms and cook until tender and browned.
  4. Sprinkle flour over the vegetables and stir to combine, cooking for 1-2 minutes.
  5. Gradually whisk in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a simmer until sauce thickens.
  6. Return the beef to the skillet and stir to combine. Cook for an additional 3-4 minutes.
  7. Remove skillet from heat and stir in sour cream until smooth. Season with salt and pepper to taste.
  8. Serve over cooked egg noodles or rice, garnished with chopped fresh parsley.

Notes

For extra richness, try substituting half of the sour cream with crème fraîche. Serve with steamed green beans or a fresh salad to balance the creamy flavors.
