Bang Bang Fried Rice

Bang Bang Fried Rice is a flavorful and spicy take on classic fried rice, combining crispy vegetables, tender rice, and a bold creamy sauce for an irresistible meal.

  • 3 cups cooked jasmine rice, chilled
  • 2 tablespoons vegetable oil
  • 1/2 cup diced bell peppers
  • 1/2 cup shredded carrots
  • 1/2 cup frozen peas, thawed
  • 2 cloves garlic, minced
  • 2 green onions, sliced
  • 2 large eggs, beaten
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • Salt and pepper, to taste
  • Optional: chopped cilantro and sesame seeds for garnish

Instructions

  1. In a small bowl, whisk together mayonnaise, sriracha, honey, soy sauce, and rice vinegar until smooth. Set the Bang Bang sauce aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add beaten eggs and scramble until fully cooked. Remove eggs from the skillet and set aside.
  3. Add the remaining 1 tablespoon of oil to the skillet. Sauté the garlic for 30 seconds until fragrant.
  4. Add diced bell peppers, shredded carrots, and peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Add the chilled rice to the skillet. Break up any clumps and stir-fry for 4-5 minutes until heated through.
  6. Return scrambled eggs to the skillet with the rice and vegetables. Stir to combine.
  7. Pour the prepared Bang Bang sauce over the rice mixture. Toss well to evenly coat everything with the sauce.
  8. Add sliced green onions and season with salt and pepper to taste. Stir briefly to mix.
  9. Remove from heat and transfer to serving plates. Garnish with chopped cilantro and sesame seeds, if desired, and serve immediately.

Notes

For extra protein, add cooked shrimp or diced chicken when stir-frying the vegetables. Adjust sriracha to taste for spice preference.
