  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon grated fresh ginger
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish.
  2. In a small bowl, whisk together honey, soy sauce, olive oil, minced garlic, lemon juice, and grated ginger.
  3. Place cod fillets in the prepared baking dish and season with salt and pepper.
  4. Pour the honey marinade evenly over the cod fillets.
  5. Bake for 12-15 minutes or until the fish is opaque and flakes easily with a fork.
  6. Garnish with chopped parsley and serve immediately.

Notes

For extra flavor, marinate the cod in the honey mixture for 30 minutes before baking. Serve with steamed vegetables or a side of rice.
