Baked Feta Pasta with Spinach

This Baked Feta Pasta with Spinach is a creamy, flavorful one-pan meal featuring roasted feta cheese, fresh spinach, and perfectly cooked pasta, ideal for a quick and satisfying dinner.

  • 8 oz cherry tomatoes
  • 7 oz block of feta cheese
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 8 oz penne pasta
  • 2 cups fresh spinach
  • Salt and freshly ground black pepper, to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, garlic, olive oil, salt, and pepper. Place the block of feta cheese in the center.
  3. Bake for 30 minutes until tomatoes burst and feta is soft.
  4. While baking, cook penne pasta according to package instructions until al dente; drain and set aside.
  5. Remove the baking dish from oven and mix the tomatoes and softened feta together until creamy.
  6. Add fresh spinach and cooked pasta to the baking dish; stir everything together until spinach wilts from the heat.
  7. Season with red pepper flakes if using, adjust salt and pepper to taste.
  8. Garnish with fresh basil before serving.

Notes

For extra richness, drizzle a bit of good quality extra virgin olive oil on top before serving or add a handful of toasted pine nuts for crunch.
