These avocado deviled eggs combine creamy avocado with classic deviled egg flavors for a fresh, healthy twist on a beloved appetizer.

Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Paprika, for garnish
  • Chopped fresh chives or cilantro, optional garnish

Instructions

  1. Place eggs in a saucepan and cover with cold water.
  2. Bring to a boil over medium-high heat, then cover and remove from heat. Let sit for 10 minutes.
  3. Drain and cool eggs under cold running water. Peel and slice each egg in half lengthwise.
  4. Carefully remove yolks and place in a mixing bowl.
  5. Add avocado, mayonnaise, Dijon mustard, lemon juice, salt, and pepper to the yolks. Mash and mix until smooth and creamy.
  6. Spoon or pipe the avocado mixture back into the egg white halves.
  7. Garnish with a sprinkle of paprika and chopped chives or cilantro if desired.
  8. Chill in the refrigerator for at least 15 minutes before serving.

Notes

For extra flavor, add a dash of hot sauce or smoked paprika to the filling mixture before serving.
